Grease the bottom of the crockpot and halfway up the sides with 1 tbsp of butter.
Put olive oil into frying pan and heat up. Place onions and cook for about 5 minutes until onions are translucent and softened.
Add garlic and mushrooms to the frying pan and cook for another 5 minutes. Remove pan from heat and stir in Italian herb mix.
Place half of the mushroom mixture into the bottom of the crockpot and top with half of the potato slices. Season with salt and pepper.
Trim pork chops and place them in a single layer on top of the potatoes. Then pour half of the vegetable stock over the top. Repeat until you have the top layer of potatoes and pour over the remaining stock until potatoes are just covered.
Top with the remaining butter and cover with lid. Cook for 4-5 hours on high until potatoes are tender and can be easily pierced with a skewer. Place under broiler for 5 minutes to brown if desired.
Cooking times will vary if you increase or decrease the default number of servings. Cook all meat, poultry, fish and eggs thoroughly.
