Ground Turkey Zucchini Boats

This is one of my favorite recipes and I can’t wait until you try it! It is simple and if you already batch cooked your ground turkey (or other ground protein), this will be an easy recipe.

Instructions
  1. Use your pre-cooked ground turkey for this recipe. Recipe link can be found below.
  2. Preheat your oven to 350º.
  3. Cut your zucchini in half and scoop out the middle, creating two boats. Cook your zucchini bloats in the oven for 20-25 minutes, or until your boats are tender.
  4. Remove from oven and layer the bottom of your boats with ½ tbsp hot sauce each. Add 1 tbsp of hot sauce to your ground turkey and divide the turkey between the two boats. Top your boats with cheese and place back in the oven until your cheese is melted.

Instructions
  1. Take the loaf of bread and remove the crust. Using a serrated knife, cut into cubes.
  2. Place bread cubes into a large mixing bowl and sprinkle with milk and allow to sit for 5 minutes to soak in.
  3. Add in garlic, caraway seeds, turkey, salt and pepper to the bowl of bread and mix well.
  4. Whisk egg whites until stiff and gently fold in half of the egg into mixture. Then fold in half of the egg white and place into the refrigerator to chill.
  5. Pour the chicken stock into the slow cooker and add in tomatoes, tomato paste and set to high to cook for 1 hour.
  6. While sauce cooks form the turkey mix into 16 small balls. Stir in rice and turkey balls into the tomato mixture and cook for 1 more hour. The dish is ready when the turkey balls and rice are cooked. Serve over zoodles.

Instructions
  1. Cut your sirloin into 4, 6 oz pieces. Pound the sirloin with a pounder (use rolling pin in you don’t have a pounder) and flatten until they are ¼ inch thick. Finely chop your garlic and place on a cutting board, mixed with 1 tsp of salt. Rub the garlic and salt on both sides of your sirloin steaks and sprinkle with pepper.
  2. In a large nonstick skillet heat 1 tbsp of olive oil over medium-high heat. Add your half moon zucchini pieces and cook for 5 - 8 minutes, or until the slices begin to brown. Sprinkle with ¼ tsp of salt and fold in your dried tomato pesto. Remove from skillet and wipe the skillet clean with a paper town.
  3. Heat 1 tsp olive oil in your skillet over high heat and add your steaks. Cook for 1 - 1 ½ minutes on each side, or until they begin to brown. Cook longer if you desire a more well-done steak. Serve with a side of the zucchini.

Instructions
  1. In a small skillet heat your olive oil over medium heat. Add your chopped shallot and cook until it is soft or about 1 ½ minutes. Add our curry and cook for another 30 seconds. Remove the skillet from heat and set aside to cool.
  2. Finely dice enough of your yellow bell pepper to fill 4 tbsp, setting the rest aside. Mix your cilantro with your bell pepper and set aside.

  4. Add the remainder of your broth and your cooked shallots to and puree until smooth. Add sour cream and lightly pulse the soup.
  5. Serve the soup and top with your bell pepper and cilantro mix.

Instructions
  1. Melt 1 tbsp of your butter in a 12 inch non-stick (oven safe) skillet over medium-high heat. Sauté your zucchini in the skillet for 8 minutes and add your basil, cooking it for an additional 2 minutes, or until tender.
  2. Set your oven to broil.
  3. In a medium bowl whisk your eggs, water, and salt.
  4. Add the remaining tbsp of butter to your skillet with your zucchini and pour your eggs over the zucchini. Reduce the skillet to medium-low heat and cover, cooking until the eggs have set on the bottom, but the top is still runny. This should take about 3 minutes.
  5. Sprinkle your Gruyére cheese evenly over the top and place in the oven. Broil for about 1 minute.
  6. Cut into 4 slices and serve.
