Heat 1 tbsp of oil in a large skillet over medium-high heat. Cover your turkey with taco seasoning and add them to the skillet, cooking for 3-4 minutes, or your turkey is cooked through. Remove the turkey from the skillet and place and set aside.
Add your sour cream, onion, and cilantro to the skillet and cook for one minute while stirring. Add your turkey back to the skillet.
In a medium skillet add 1 tsp of olive oil and place over medium-high heat. Once hot, fry your tortillas for 1 minute on each side.
Fill each of your tortillas with your turkey filling and top with your strips of bell pepper and 1 tbsp salsa.
