Instructions
  1. Spray a large skillet with cooking oil and place over medium-high heat. Add your veggies and your liquid aminos, cooking for about 5 minutes or until the veggies are tender.
  2. Add your favorite protein if you desire and serve.

Sweet Potato Hash

This sweet potato hash goes great with your favorite breakfast. Try it with ground turkey or an egg white scramble. You can also add onions or bell peppers to spice it up!

Instructions
  1. Preheat your oven to 400º.
  2. Slice your small sweet potato into strips and toss in a medium bowl with your coconut oil, and a pinch of salt and pepper.
  3. Lay your sweet potato fries onto a cookie sheet and place in the oven. Cook for 20-30 minutes, or until your sweet potato fries are cooked through. Your fries should be soft on the inside and crispy on the outside.
  4. Add your sweet potato fries to your favorite dish!

  3. Add your cauliflower florets to a large plastic bag, along with your hot sauce. Shake the ingredients together so that the cauliflower is coated completely with hot sauce.
  4. Spray a large baking sheet with olive oil and spread your cauliflower on the sheet.
  5. Place in oven and bake for 20 minutes. Serve hot.

Instructions
  1. In a large saucepan over medium heat, warm olive oil. Add in onion and saute for 5 minutes until soft. Add in the beans, potatoes, and broth and bring to a boil.

Instructions
  1. Heat oil in a large saucepan over low heat and saute garlic and basil for 2 minutes.
  2. Add in bread and continuously stir for 2 minutes.
  3. Add in tomatoes and 1 cup of water. Simmer for 15 minutes and stir. Add salt and pepper to taste and add in more water if soup sticks to the bottom of the pan. Soup should be very thick.
  4. Remove from heat, drizzle with olive oil and garnish with remaining basil. Serve hot.

Instructions
  1. In a large saucepan heat oil over medium heat. Add in leeks, onion, garlic, carrot, celery, and parsley. Saute together until the vegetables are almost tender. About 15 minutes.
  2. Add in the cubed potatoes and cold water and sprinkle with salt and pepper. Cook for 15 minutes until potatoes are tender.
  3. Remove pan from burner and let cool for 15 minutes.
  4. With an immersion or hand blender, carefully blend until the soup is smooth. Place pan back on the burner and gently reheat over low heat.

Instructions
  1. In a heavy large pan heat butter and add in onion and fry for 6-7 minutes until onion is soft. Add in garlic and tomatoes and cook for 2 more minutes.
  2. Rinse rice in a strainer and drain. Add rice to the pan with cumin and stir. Turn off heat and transfer mixture into the slow cooker.
  3. Add in carrots and pour in the stock, salt, and pepper. Turn slow cooker to high and cook for 1 hour.
  4. Lay spinach over top of the rice and replace the lid and cook for another 30-40 minutes until spinach is wilted and rice is cooked.
  5. Stir spinach into rice and top with an additional pinch of salt and pepper and top with cashews.

  1. Place dried porcini mushrooms and a large microwave-safe bowl, pour over hot water and let soak for 15 minutes.
  2. While the mushrooms soak, place garlic, tomatoes, wine, vegetable stock, and mushrooms in to slow cooker and place on high.
  3. Using a strainer, drain the mushrooms and hand squeeze them to get out as much water as possible. Chop mushrooms finely and add them to the slow cooker. Cook for 1 hour and stir halfway through.
  4. Switch the slow cooker to low heat and cook for 1-2 more hours until the mushrooms are tender.
  5. Cook pasta in boiling, salted water until al dente according to package directions. Drain pasta and place in a large bowl with parsley, salt, and pepper. Top with sauce from slow cooker and toss together.

Instructions
  1. Place the dried shiitake mushrooms in a microwave-safe bowl. Pour in hot water until the mushrooms are just covered and let soak for 15 minutes. While mushrooms soak, trim and thinly slice the fennel.
  2. In a heavy pan, place the oil and heat up. Place in shallots and fennel and saute for 10 minutes over medium heat until softened and browned. Add in mushrooms and cook for another 2-3 minutes and stir a few times.
  3. Move vegetables from pan to the slow cooker and drain the mushrooms and add 2 tbsp of soaking water to the slow cooker. Chop mushrooms and add to slow cooker.
  4. Pour in cider and stir in sun-dried tomatoes as well as tomato paste. Place in a bay leaf. Cover slow cooker with lid and cook for 3-5 hours on high and vegetables are tender.
  5. Take out the bay leaf and season with salt and pepper. Garnish with chopped parsley and serve.
