Instructions
  1. Spray a large skillet with cooking spray and place over medium-high heat. Add your bell peppers, diced onions, and chopped green onions to the pan and sauté for about two minutes. Then add your ground turkey to the same pan and your taco seasoning.
  2. Cook for about 5-8 minutes, breaking the turkey up with a spatula and mixing all of your ingredients together.
  3. Once the meat is cooked through, scoop some out and into your lettuce shell. Top with a spoonful of sliced cherry tomatoes and enjoy!

Instructions
  1. Preheat your oven to 400º F.
  2. Spray a 2-quart rectangular baking dish. Place your sliced onions into the baking dish.
  3. In a small bowl mix your tomato sauce, cilantro, and jalapeño pepper and pour the mixture over your onions on the baking dish. Carefully break your eggs and place them on top of the tomato mixture that is now in your pan on top of your onions. Sprinkle with salt and pepper.
  4. Place your baking dish into the oven and let bake for 20 - 25 minutes, or until the egg whites are cooked through. Your egg yolks should be thick, but not solid.
  5. Remove from oven and sprinkle with cheese. Place your baking dish pack in the oven for 1 more minute to melt your cheese.
  6. Serve with tortillas.
